I've eaten this amazing combination of juicy meat and crisp skin all over the US, as well as in some of the top restaurants in Shanghai and Beijing, and the duck at Ginkgo Sichuan on Route 1 in Fairfield ranks way up there.
Owner Yingying Yan opened Ginkgo Sichuan Cuisine restaurant in November of last year. She first came to the US as a student of Bridgeport University.
When she realized there were only two Sichuan restaurants in CT, she saw her opportunity to bring authentic cuisine here. And that means spicy, but it also means flavor.
Her partner, Chef Zhou, is a veteran of multiple restaurants in China, and was a professor at the Sichuan Cooking College. Ginkgo clearly is the most authentic cuisine I've tasted in CT, both in flavor and presentation.
But the specialty of the house is the duck, which they serve in the traditional, three-course way.
First, the crispy but not crunchy skin and tender, juicy duck meat is served with scallion and hoisin in paper-thin pancakes - together they are a sweet, savoury, salty combination.
Then second, you have stir-fried duck with peppers. Finally, you have a tasty duck soup. If you haven't had it this way, you've been paying for a three-course meal and only eating one! Just make sure to order the duck in advance so you aren't disappointed on a busy night.
